We never get to our bananas before they are covered in brown spots and too mushy for my liking to eat just plain. Fine by me cause I love banana bread, which is what I set out to make this evening. Then I realized (like I always do) that I do not own a bread pan. Usually I just zip over to the grocery store and buy a disposable one, but tonight I stepped out of the box and thought, "Wait! I can use my cupcake pan!" (Yes, I know it is sad that that was me stepping out of the box) Since I don't have one specific recipe I use when I make banana bread I decided to see what good ol' Martha had. That is when I found THIS recipe and I got really excited. Banana cupcakes with honey-cinnamon frosting! Uh- yes please. I love frosting. I love cupcakes. I'm in heaven. (plus, I am using up my old bananas!) Win. Win. They were good. The frosting doesn't taste so much like frosting- more like really sweet honey butter. So the next time you find yourself in the kitchen with 3-4 brown nasty bananas that are begging for redemption, try this recipe. That's great! I have a couple of nasty looking bananas in my kitchen right now... they're just beggin' to be made into something delightful. Usually I do a smoothy, but I think I'll have to try yours and Martha's recipe. Thanks!
ReplyDeleteyummy. I'll have to give those a try. Do you ever freeze your bananas? You can use frozens for banana bread, or smoothies.
